it is all about the amount of time in which Google first indexed, or sighted a link to said “aged” domain. An Aged domain has been indexed by Google for say 5+ years. You'll notice that the highest ranking sites have been around for a long time. For example, Amazon, Apple, Apartments.com, etc.

We can't measure the % but it matters.

It matters, but these day as i see several newly domain websites are ranked in top pages, so i dont think it matter actually. Only quality backlinks.

It doesn't matter much these days if a new domain has good quality content and high-quality keywords, then that new domain is more likely to rank instead of the old domain. Some people prefer to use the old domain because the old domain already has its backlinks from different sources, which brings an advantage to the new project ranking.
