Yo, been running a few WooCommerce stores on a VPS but the performance is starting to tank as the catalog grows, and I am getting tired of patching plugins every week. Thinking about going headless and decoupling the frontend, but I am not sure what to use on the backend that plays nicely with a custom setup. Anyone here actually running something like that in production?

I've seen a few stores go that route. Keeping WooCommerce as the backend and using Next.js for the frontend works surprisingly well, since you can still use WooCommerce for orders, products, and plugins while getting much better frontend performance.
If you're ready to move away from WooCommerce entirely, Shopify Headless or Medusa are worth a look. Just be prepared for a lot more development and maintenance compared to a traditional setup.
