Oissite company offers plans on Windows 2003 and 2008, which one is better to use and why?
Any input is appreciated!

Yes, Windows 2008 is the most preferred and used Windows OS on servers. Its a stable OS and has almost all the features of Windows 2003. If I am not wrong, Microsoft has also stopped providing support for Windows 2003.

Mostly on webhosting company their Windows server is under a shared hosting server. Meaning only ASP/ASP.NET scripts that are allowed to run. But if you have a dedicated Windows Server then you can install PHP/MySQL on the server so that you can install Joomla CMS.
The best server to install Joomla is Linux since it is cheaper than Windows Server.

IMO Windows 2008. 2003 has been discontinued by Microsoft now. Make sure that the selected hosting company offers you with the following:

Upgrade and downgrade option if you require to opt for the same at any point of time.
24X7 free support.
Fully managed servers, so that you don't have to look into the server side issues.
Reasonable pricing.

Windows 2008 is the latest OS from Microsoft with its added features in it. Normally we advise to use the latest one instead of the older one so that you have more flexibility to add/install any program.

ofcourse go with the latest 2008 and it more stable and easy usage compare to windows 2003.
if you still stay with the old OS, you may face issues of migrate in the future.
