The name "Google Dance" is often used to describe the index update of the Google search engine. Google's index update occurs on average once per month. It can be identified by significant movement in search results and especially by Google's cache of all indexed pages reflecting the status of Google's last spidering.

As per I know Google Dance is the period when Google is rebuilding its rankings, and results fluctuate widely for 3 to 5 day.

During the month, Google sends out robots (spiders) to crawl the web and archive every website it finds. These archived websites will be presented in the next update of the Google index (database). The update process is initiated every 30 days or so, although on some occasions there have been more than 30 days between updates.

Google dance is the time period when google sends its spiders to crawl a website to check for its contents, it is said to be happening once in a month, nobody has got any better idea about when google is indexing the web pages. In recent times indexing is done regularly. At this point of time the ranking of a website can fluctuate or dances, when checked on the servers in the data centers of google. Chances of a higher ranked website getting disappeared all of a sudden from (SERP) or Search Engine Resulting Pages is more.
Google has got several data centers and servers now and the google sends its spiders to check the websites from any of these servers. These spiders check for any change in the content of the website even a minor change is reflected as it checks for relevancy of the content and so many other factors like back links, fresh content, keywords, coding standards, domain names, etc.

In search engine optimization (SEO), Google Dance is an out-dated slang term used to describe the period of time in which Google used to rebuild its rankings, and as a result of this rebuilding, rankings of Web sites on Google's SERP may fluctuate in order during a several day period. The "Google Dance" would happen anywhere up to 36 times per year, however in 2003 Google begun updating its index on a weekly basis, which all but eliminated the Google Dance.

Google dance is the time taken to rebuild Google's ranking algorithm.Google dance algorithm affects the keywords ranking.
It takes time of three to five days....
