I would like to find out as to what would you guys prefer from a hosting company?

I personally prefer to have high availability in the network, hardware, and software. Since I am able to perform the system administration myself customer service is not a huge concern of mine if the host has quality services.

I would prefer top customer service and support irrespective of the price. I don't think customer service is dependent on the prices. High priced hosting plans of a company don't necessarily imply top quality customer service.

Good customer service can be offered even by keeping the prices low. :)

For shared hosting I'll be looking for great uptime, 24/7 support with max 2 hours response time for support requests, fast servers, and decent price.

Well I believe that this is also a direct representation of the good companies out there and their longevity. If a company has a policy of customer service being above anything else, they will swim. If a company focuses solely on low prices and cutting corners, they are doomed to fail horribly.

It is simply the way of the industry.

The customer service is key but if you just want to host your blog or family photos (okok.. flickr is free..), I think you don't care about the service.. you just want to host your files for the most cheaper price you can find.
