Confused in SEO types and methods

I have totally confused in remember the SEO types and methods.Some websites were described the SEO method is 1.ON page 2.OFF page and type as 1.White hat 2.Black hat 3.Gray hat.
But some websites were described the SEO method is 1.White hat 2.Black hat 3.Gray hat and type as 1.ON page 2.OFF
So what is the actual meaning for SEO methods and types?

i think there are three types of seo - white hat seo, black hat seo and gray hat seo.

When we are talking about techniques of SEO ie stands for 1. White hat SEO 2. Black hat SEO and 3. Gray hat SEO.
1. White hat SEO means ethical methods (allowed to create backlinks)
2. Black or Gray hat SEO methods contain unethical methods.
And when we are talking about types of SEO ie 1. On-page and 2. Off page
