I am going to make the ecommerce website that will contain more than 500 products with payment gateway options.Most of people referring the magento CMS platform.So ecommerce website should be develop by only magento platform?or Is possible to make my website in PHP platform?

Ofcourse it is possible that you will make more better and faster website with your own PHP coding rather than by using Magento because the files could be heavy in Magento. If you will select right framework, then it is more better as you can see that most of the big ecommerce websites are custom made and magento can be used for initial store setup.

php is not a platform. Is programming language!
Magento, wp, drupal, x-cart, and all these PLATFORMS, are made with php.

Using an open source CMS is a good suggestion If you do not wish to work with Magneto, you may either go for WordPress or Joomla. Yeah! with WordPress, you will have to be careful because WP websites are prone to be hacked. Buy, WordPress.org is the secure way! You can show your PHP talent with WP, making custom theme by writing PHP code, or customizing the existing ( if you like the one) on WP dashboard. Since you seem a techie, i would recommend you to have a glance at a professional tool namely Template Toaster. You might find it interesting.

For creating E-commerce site Magento is best...you also create in PHP...but maintain website in PHP is difficult compare to magento...

See it entirely depends of what kind of features and functionality do you want in your E-Commerce website. Ideally, Opencart is a CMS that is easier to use and manage as compared to Magento which is complex, high maintenance and expensive to develop an e-store on. Version upgrade is a nightmare and a significant cost. You can also look into Wordpress using WooCommerce to achieve E-Commerce functionality. You will have to see if the above mentioned Content Management Systems have plugins and extensions that provide the features and functionality that you require however you will be restricted to the architectural decisions that the developers of these content management systems have made.

Custom web application development is only good if you want bespoke features and functionality and where developing the same seems somewhat restrictive with opensource content management systems.
