2. Search Engine Referrals
3. Visits Referred by Specific Search Engine Terms and Phrases

Th easiest way is to check if you've moved toward set goals. Doing any activity without setting a goal might not be effective way how to approach SEO or any other area in marketing or business. But to be more specific, I would look at increase in visits, unique visitors, and revenue (but this depends on the type of website - retail, content, blog?). I would suggest (from experience) to look at traffic by segments, consider seasonality, and attribute other marketing activities. I experienced that SEO agencies claimed all organic traffic as "SEO traffic" which might be very far from truth (e.g. increased spend in PPC results almost always in increased organic traffic, and so on). It usually also matters whether you want to see the truth or prove the point ;)

While every business is unique, there are some reports you'll want to monitor on a monthly basis regardless of the vertical you belong to, these include:
Organic Search Traffic – visits from non-paid search – year over year, and month over month.
Ranking Reports – core keyword ranking reporting – with historical comparisons.
Ecommerce Revenue – for sites with eCommerce, revenue by source reporting – year over year.
Lead Generation – aside from sales & revenue, what are the key goals for your site? Contact form submissions? Phone calls? Make sure you have the ability to measure, monitor and report on these every month.

Use Google Analytics or Google Webmaster tool to check the results of SEO Campaign. These tools will describe how are your keywords ranking on SERP, website traffic, organic results, website insights etc.
