You can check URL whether it is Secure or not, if the URL is secure then it will contain HTTPS and if it is not then it is HTTP only. Even if it is secure then check whether payment gateway are recognized and reputed or not.

To my opinion e-shopping security is based on platform it is built on. For eg Magento and open cart is highly secure, Joomla is occasionally vulnerable to attacks and Magento is highly secured and hardly vulnerable to attacks. According to me, to share our credit card information the site should be trust worthy else we wont.
